Item two from The Pairing Post is here — and this one's a little more golden, a little more nutty.

Say hello to the Honey Nut Crunch Blondie — that classic honey-toasted, nutty cereal flavour, baked straight into a soft, buttery blondie. If the Cornflake Brownie was deep and chocolatey, this one's warm and toasty — think honeycomb and roasted nuts rather than cocoa.

Why this one

Every good cereal cupboard has the golden, nutty one sitting next to the chocolatey one — so it felt right for this to be the blondie in the line-up. The crunch comes through in the topping, the honey comes through in the bake itself, and there's a proper toasted-nut flavour running through the whole thing.

Paired with the right drink, it's going to be one of the standout combos in this month's box — more on that pairing soon.

Remember that Malted Hot Chocolate pairing from a couple of days ago? Time to tell you what it's actually for.

Say hello to the Cornflake Brownie — a fudgy chocolate brownie topped with a golden, crunchy cornflake topping. It's the first item from The Pairing Post, my new monthly box, launching 1st September.

Why this one

I wanted the first month's theme to feel like a proper throwback — that back-to-school, breakfast-cereal nostalgia, but grown up. The Cornflake Brownie was the obvious place to start: deep, fudgy brownie underneath, that unmistakable crunch of golden cornflakes on top. It's the reason the Malted Hot Chocolate pairing works so well — that malty, cereal-milk note ties straight back to this.

Behind the scenes: I'm building something new

If you've been following Blue Baked It for a while, you'll know the usual rhythm — pop-ups, custom orders, the odd chaotic Etsy rush. That's not going anywhere. But behind the counter, I've been quietly working on something different, and it launches 1st September.

I can't give away all the details yet (you'll get the full reveal next week), but here's the honest version of why I'm doing this.

The problem I was solving for

This year taught me something I needed to learn the hard way: a business built entirely around "say yes to everything, all the time" isn't sustainable — especially after the health year I've had. I love baking. I don't love feeling like I'm always three steps behind my own to-do list.

So I started looking at bakeries doing things differently. One thing that stuck with me was the idea of a capped, predictable release — a set amount of product, a set window, then done. No chasing your tail trying to fulfil endless one-off orders on top of everything else.

What I'm building

A monthly box. One size. Released on a two-week cycle — two weeks to order, two weeks to bake, test and prep the next one. When it's sold out, it's sold out. No guilt, no overextending, no 2am "I'll just squeeze in one more order."

Inside, alongside the bakes, there'll be something I've never done before with a box like this — drink pairing cards, made from the pairing work I've been building here on the blog. More on that very soon.

This month's theme

Without giving too much away: think back-to-school nostalgia, but make it grown-up. If you know, you know.
